When you’re in the mood for pie, but you want something more rustic and super easy: this peach galette recipe!

- 1 recipe for 9-inch pie dough
- 5 cups peeled and sliced peaches
- 1/2 cup sugar
- 2 1/2 tbsp minute tapioca
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp freshly squeezed orange juice

Every time I use fresh peaches I add a little bit of almond extract. It really is perfect and the flavor is so much better!

Thanks! That seems like an easy and tasty dessert option for folks who might not have a lot of baking wares. Hell, in a pinch you could just get by with prerolled dough sheets or a large glass or jar for a roller.

I discovered plum gallette several years ago in a breakfast recipe cookbook. I love the rustic freeform shape and the ease and forgiving-ness of the dough! My recipe called for flour mixed in with the fruit, like a regular pie. I had not thought to use instant tapioca. I think I'll try it. Thank you for introducing more people to this amazing ancestor of pie!

I love sprinkling desserts with turbinado or raw sugar. It adds such a nice flavor and mount feel. It also let's you cut the sugar in the dish because you get that punch of sweetness
