On a winter day, i love to add already cooked pasta spaghetti noodles with cheese. I may put a can of corn to the mix.

Hi Nicole,
you asked about favorite toppings. how about burnt cornbread.
i made your recipe pretty much as is and it came our real good (thanks for the vid);
i made a pan of cornbread to go with it but got distracted and kinda forgot about it until i started smelling it; wasn't black burnt but lets just say crusty.
so i crumbled some crusty cornbread in a bowl and ladled some chili over it and it was good! aka frito pie without the fritos.
i don' t know that i would advise burning your cornbread for this but the chili salvaged a pan of overcooked cornbread.

If I may just add, your version of Chili Concarne is one of the best out there, if not the best... But, since you''re using canned beans that are already cooked... Shouldn't you add them at the end of the long cooking time? Maybe a half an hour before ?? Thank you.

Ohhhh...do try a tablespoon of cocoa. You can't taste it, but it adds just that special "it" factor.

I dont use ground beef; instead, I use fine cubed or minced beef. 1 can of kidney beans, 2 cans of chili (pinto) beans. I only use about 1-2 tablespoons of chili powder, some of which is chipotle chili powder. I add mexican oregano, more onions, 2 poblano peppers and a can of diced green chilis. 2 cans of fire roasted tomatoes, and water with Better Than Bullion roasted beef. Top with cheese, whatever we happen to have, cheddar, jack, pepper jack or mexican blend, cilantro, green onions and eat with tortilla chips. I rarely have leftovers.

There is a difference between chili and chili beans if you look up the definition for chili chili does not have beans in it
