Manila clams? Not. Little neck or cherrystones. No cheese! I dig my own clams in Rhode Island. Some bread crumbs would help but pretty much spot on.

While I think your recipe is fantastic I have to stop and add this. NEVER PRY OPEN CLAMS after they’ve been steamed if they do not open on their own is a sign that they are bad and quite possibly toxic. If they are raw and you know for certain that they are fresh then you may certainly pry them open but after they’ve been steamed if they do not pop up on their own leave them alone. On a plus note I think the pancetta was a fantastic add
