Tip: if you can't find cake flour or tempura batter mix, you can do this: mix cornstarch and 2 tablespoons of all purpouse flour

Cake flour substitite: For every 1 cup AP flour, take out 2 tbsp of AP flour, add 2 tbsp of cornstarch.

my favorite tempura is maitake 舞茸 😋yumyum.dipped in warm mentuyu, grated radish and ginger mix.fresh maitake straight from the northern mountains is now very, very rare it's very expensive but it's worth it.so when the chef got some, he calls my parents first

I thought traditional tempura used seltzer water. It's nice to know there are other ways and it definitely allows me to learn more and apply it later. Wonderful video.
