Fried brain is really good
I recommend sheep and goat over cow or pork but you do you
I also recommend to "blanche" it, but without boiling it too much, making it lose the right shape or consistency and only a touch of apple vinegar would be more preferred for the blanching.
Fry it in batter, beer or plain is the same, just keep in mind the overall flavor, being it 90% pure cholesterol fat and fatty oils, it will have the lightness of lard, so don't season it or the batter, you should feel the slight taste of the blanching and of the basic fried batter.
If not, cook it in onions a touch of water, iron skillet in oven with the lid on.
