SECRET FILIPINO FOOD in Los Gatos, a small town in the Bay Area that’s 70% Caucasian.
We're at The Cats off of Highway 17. If you’re from the Bay Area, you’ve driven past it many times and never ventured inside and you might not have known that the owner is Filipino and he is going full send on introducing his Filipino cooking to this small town.
And one of the things that he's cooking up is SMOKED CRISPY PATA. His pata is smoked for 6 hours, sous vide for 10 hours, and then deep-fried. The dip is made from pickled onion plum, red wine, vinegar, and garlic, which are traditional Filipino ingredients. Did you know filipino eat communal meals using their hands? They do this to have a better connection, respect, and understanding of the food they’re eating.
The smoked crispy pata is an IYKYK secret menu item and you’ll only hear about it on my page.
