Did you know there's a big difference between the corn you eat on the cob and the corn that's made into cornmeal? Al Spoler stops by Hopkins Produce in Havre de Grace and shows us the difference between sweet corn (which you eat fresh, frozen, or canned) and field corn (which is dried out and used for cornmeal and livestock feed.) Dave Hopkins shows Al how to pick sweet corn by hand, and then his wife Michele has a great recipe for fresh corn soup!

I am from the south and my family grew up eating field corn but it didn’t look dried. For some reason we can’t get it anymore. My family made fried corn with the field corn. They shucked it, scraped it off the cob, and used the back of the knife to get the corn milk into the skillet with the corn. It’s so good!

The farmers in southern Ontario used to plant one pass of field corn along any roads and plant their sugar-enhanced and supersweet behind it to discourage pilfering.

I like field or dent corn before it is dried. Both sides of my family made up it. It is only usable for cooking fresh picked. It must be picked in a very small window of its growing cycle. That window is about a week maximum. More like 3days depending on the rain. Shuck it. Boil it.(or not depending on rain). Remove the kernels and fry them in butter with salt&pepper. Eat. Freeze the extra.

Question, has anyone ever heard of feeding out cows on sweet corn or bagging sweet corn in 50# bags for livestock feed, or maybe feeding dairy cows a sweet corn feed instead of field corn? Can you feed sweet corn to horses..., without the cob, of course?

Local bubba's keep asking me if they can lease my land, I always tell them sure, in fact you can lease it cheap. 3 conditions, NO corn NO soy beans and especially NO hay. But you can plant crops people actually need, you know, produce. Potatoes, carrots, oats, onions, cucumbers, wheat, industrial hemp, etc. Sadly, no takers

The thing about fresh corn (in my opinion)it has this kind of a hearty after taste compared to a canned corn.
