⚔️🔥🥩 Sword Steak

The marbling on these Prime Tri Tip’s caught my eye for a fair price at the grocery store. Not used to seeing it sliced, always whole so I was intrigued how it would cook up. Reminded me of a Denver steak or Flat iron, really nice.

PREPARATION
They were medallions and not huge so I opted to skewer them on the swords so I don’t have to individually flip them all. Smaller chunks on the ends where there is less heat and bigger ones in the middle. Hit with @lawrysseasoning and on to the grill.

COOK
This is a mix of getting a nice crust, and continually flipping for evening cooking in the cold. A lot of fat so minimize direct flame for too long, and shuffling the skewers around based on colour and heat. Rested 5 minutes, sliced and finish with salt, pepper and garlic butter. Can throw under the broiler for 2 mins if you want it sizzling hot.
