While my sword fish fillets are on the grill I’ll usually have a melted tbsp of butter and just before the final 2 flips I’ll baste with some salted melted butter. Helps to really get a sear/crust on the fish. Love the olive oil in the beginning to help the seasoning stick and to help prevent the fish from sticking to the grill. I could eat sword fish 3 nights a week if I could afford it 😂

I love how Americans introduce themselves using their job title, like Postman Pat or Fireman Sam or Chef Alvarez. It's really good to know that sort of info and it saves the trouble of people mistaking you for someone else.

I cook/grill with the Big Green Egg, so 400-450 for 12-15 minutes or an internal temp of 145-150. Sounds good to me and that Salsa looks damn good!

I hate fish but I'm trying. I soaked the steaks in buttermilk overnight to get rid of any fish smell or taste. I watched your video to .earn how to cook it, thank you. Man I hope I like it because I want to move away from beef and pork. Wish me luck. God bless

I always get the cut with the darker main vein in it. To me, the darker vein is the best part of the swordfish.
