I just realized part of what makes the content on this channel so special. A lot of other cooking channels try to sell “hacks” or “things you need to try” or “this is the only way you will ever want to eat this specific food” and act as if they have the only answer to true cooking. This channel never forces the recipes or methods down your throat. Steve and the fellas just show us the way they cook and then let the food do all of the talking. You don’t need an art critic to tell you that a piece of art is beautiful, the art should do that on its own, and that’s exactly how these videos operate. It feels natural, and it actually makes me interested in the food available at Vivaldi. I hope all content creators (not just food or cooking creators) can realize this as well.

I love how this chef is part of a new bunch of chefs on Youtube who get straight to the point. Explain everything necessary. And let you know there could be other ways to make the dish. ABSOLUTELY REFRESHINGLY WHOLESOME. ❤️❤️❤️

As an italian who, as any other italian, knows how to do an aglio, olio e peperoncino since my youth I can say that it's a pretty accurate way of doing it, simple, quick: delicious. Pepper, parsley and parmigiano-pecorino are not in the original recipe but they are considered personal preference. Buon appetito

As a former chef, I appreciate this channel, i love learning new recipes, especially Italian/ any latin dish. Ive been getting into asian cooking at home lately, but i started with latin food when i was a young kid, i love it's simplicity and fresh flavors, thank you for the entertainment and the education

This is fire, but if you want the ABSOLUTE version, you can put toasted breadcrumbs on top after the dish is ready. We do this a lot in south of Italy and it's better if the breadcrumbs is "homemade" with old bread, it's more thick and crunchy❤

Man, I cooked for 5 years before I switched to my current career many years ago. I love my job now, but I definitely miss the gratification I felt when people told me my food was good. That’s the passion of a chef, and that’s why I’ve watched many of your clips.

One day I was heading to the elevator to re-supply, and this bonny elder gal gets on the same elevator as me. I was wearing my custom blue chef coat, and black cap. She asks me if I cooked the Kang curry that day, and I said yes, of course. She smiled at me and asked if she could shake my hand. Which I gratefully obliged.

It was one of the most impactful moments of my entire cooking career.

Aglio, olio and peperoncino...the holy trinity of ingredients that make such a simple dish and an almost fool-proof recipe that never dissapoints. Probably one of the best pasta dishes out there.

Love it - this is what a lot of home chefs don't know, creaminess doesn't need cream just pasta water and oil to emulsify in the pan and you can add a bit of parm during the cook to make it thicker/creamier

As italian (not professional cook) i raised up with pasta and aglio e olio. Two tips on top of this video:
1. Make sure you wash properly your hands right after you dealt with the peperoncino.
2. Olive oil burns with much less heat than any other oil. Keep the flame low or it will realease toxins.

I had this in a restaurant figured out how to make it for myself. This works for rice as well and its gorgeous. The simplicity makes it perfect for a lazy dinner
