iodine in iodized salt will prevent the beneficial bacteria from growing for the fermentation process. it's also best to use filtered water, spring or distilled for the same reason because of the chlorination (if using water/brine). traditionally you would pound the cabbage and salt until a lot more water is released and instead of cheesecloth you use one of the larger tough outer leaves to cover the top of the kraut and use a glass or ceramic container (plastic may leach chemicals).

There a lot of different recipes here on youtube, I've tried a few, I shred the cabbage in a food processor weight and add 1.5 gr for 100 gr of cabbage. 1kg = 15 grams . I pick a large bowl put the shredded cabbage and spread the salt and mix it with only no kneading so far. Wait about the 30 minutes, the cabbage absorbs the salt, it makes much easier to knead. After that, I put into a mason jar and press down hard and always leave the liquid above the cabbage. Close the jar and store. Last time I made I fermented for 4 months then I tried, it was good. I saved another jar and wait another 5 months, a total of 9 months and was even better. I saved it in a dark place, I don't know if the dark matters, I just followed one of the recipes I found. I make every year around Saint Patrick's Day because of the cabbage price is very low, about 20c/lbs in the USA.

After I press the juice out of the cabbage with salt, my jar couldn't contain some of brine. I added the exact amount of salt needed. Should I throw it away? I am lost!

Hi, thank for the video. I take it that you washed the outer surface of the cabbage since it is not yet cut. Is that sufficient? Won't there be pesticides, pests inside the cabbage? 🤔
