Whole oats are packed full of minerals and fiber, but they also contain anti-nutrients like enzyme inhibitors and phytic acid which prevent proper digestion and mineral absorption. In the case of oatmeal, soaking overnight is necessary to neutralize the anti-nutrients and provide us with a delicious and nutritious bowl of oatmeal.

OVERNIGHT SOAKED OATMEAL
(serves 2)
*Ingredients*
• 1 cup whole rolled oats
• 1 tsp apple cider vinegar
• 2 cups water
• raisins to taste
• nutmeg and/or cinnamon to taste
• 1 cup raw milk (or substitute water, coconut milk, almond milk, etc)

*Directions*
1. Combine oats, vinegar, and water in a small non-reactive bowl (glass or ceramic) and cover with a kitchen towel. Leave undisturbed at room temperature for 8–12 hours.
2. Pour contents into a small pot and add desired flavors (raisins, nutmeg, cinnamon, etc). Cook at medium heat for about 4 minutes until the mixture is noticeably thicker and you can hear bubbles at the bottom.
3. Add the raw milk and, mixing often, cook just below a simmer for about 10 minutes until the oatmeal achieved the desired thickness.
4. Serve immediately with butter and pure maple syrup.

Going to try this as I eat oats a lot and just recently learned about the phytic acid issue. I make pancakes out of them which are delicious (just 1 banana and 2 cups of oats blended with just enough water to have it thick enough but also pour nicely onto a pan). Thanks for the info.

Very good, I wasn't even a fan of oats, but this video got me interested. I'm doing everything same except I am using water instead of milk to finish the cooking, then I add cashew butter and top it up with fruit (raspberries, blueberries, strawberries, banana and two dates for sweetness), it became my favourite breakfast, it gives me energy and a nice gut feeling. Thank you!

It’s amazing the different opinions you find on the internet regarding oats. I’m a young 58 and only just got into oats! The differing opinion I found is that the oats should be damp, not drowned. So the ratio of oats to water is one to one. There you go drowning the oats in water. So, who is right, or is there no right or wrong? Please help.

Thanks for the informative video, I have a couple of questions.

-is it ok to soak the oats in milk? If so, should I leave the soaking oats and milk in the refrigerator during the night or is it ok to leave it at room temperature, even if there's milk in it?

The second question is: where did the enzyme inhibitors and phytic acid go? Now that we have soaked, aren't they still in the oats if we don't rinse them with water?
Sorry if the questions are silly, I have never soaked food so I don't know much about it.

Wow. Oats have always made me very ill. They gave me severe intestinal cramps and made my muscles sore. I will try this and see if it changes anything. We didn’t have an oatmeal culture in my country until recent years and I never knew we had to do this preparation. Thank you so much.

Really cool! I also found out, that if you leave the oats for longer, and a little tiny more vinagre, they sort of taste like cheese?
Idk if that good or bad, but it’s really awesome for people like me who don’t eat dairy. I use it in savory dishes, like pastas, tacos, anything that can benefit from a cheesy flavour, without the cheese!

Hey one question. I know so many people have already asked but i want to ask again, Should we not remove the water before cooking the oats because that water has that phytic acid in water ?

Can we saok oats in milk by adding some curd to it overnight( it becomes curd)
And just eat it as it is in the morning by adding some toppings??
Or is it better to soak oats in water overnight and then add curd to it in the morning?

Dennis, would you use the same procedure for organic steel cut oats. Secondly would this method minimize lectins ? Thank you for sharing this with us. I really enjoy oatmeal for breakfast..

Most traditional soaking recipes recommend 2 Tablespoons of the starter which is quite a bit more than you used. Any difference in the fermentation process with only using 1 tsp?

Can i add flax seeds and chia seeds to it and then make smoothie ? I am wondering is it good to roast the oats or soak them ?
