How to Safely Steam can in the Nesco (Carey) Smart Canner

Hello everyone! In today's video, I'm revisiting the topic of steam canning in the Nesco canner. A couple of years ago, I had my doubts about its safety and recommended against it. Over the last two years, I haven't done any steam canning myself, sticking with my original stance. However, I've since come up with a way to steam can in the Nesco or Carey canners that fit with the USDA guidelines. Note that this doesn’t mean that the USDA – or the Nesco company – endorses it, but rather that I feel more comfortable with this method of steam canning in the Nesco (Carey) canner compared with how other people do it.

In this video, I'll demonstrate three different ways to steam can safely. I'll show you how to use four, six, and eight cups of water while keeping your jars above the water, as required by the USDA. These methods ensure your canning process is safe and effective, whether you're making jams, jellies, or other high-acid foods.

I'm surprised that the company hasn't made the steam canning instructions more clear on the steaming process.

Thank you, Rebecca. I just water bath canned for the first time in my Nesco. I hope I did everything right! I made apple pie filling. I did sub fresh squeezed lemon juice for bottled lemon juice. There was no siphoning, . and it looks like all 5 pints sealed. 😁

In your video you said 8 cups of water to pressure can in the Nesco canner. I have a Carey brand canner (same canner just different name. In the manual for the Carey canner it says 4 cups of water and that's how I have used it for years. I verified both manuals and it says 8 cups for the Nesco and 4 cups for the wonder when and why it changed??

Thank you for sharing! I see the option on the canner, but instructions are confusing. Only found this video about steam canning. I have been using low pressure for most quick waterbath, because just not sure about the steam button.

I accidentally spilled water into the canner without the bowl being in there; the water came out the bottom; I'm waiting for the canner to dry out completely before I try it.
