if you havent already discovered it, I think you should turn on clipping in the mirror modifier. It will allow your mirrored extrusions to be automatically together on their mid line. It also prevents faces from being created between them

This is so good. I don‘t have a hod dog mesh and I definitley don‘t need one of a submarine but these where just the two funniest tuts if ever seen, and I‘ve seen a lot: I was there 3000 years ago. Looking forward seeing more Blender tuts.
