I am a emergency room RN who was attacked at work and now have a head injury. I started watching your videos a few months ago as I am home a lot. I have been able to make a few things from your videos after watching it a few times. I want to thank you. Because of your teaching I have been able to learn new skills that my family really enjoy ( especially sourdough bread)
I’m going to give you some advice… don’t listen to negative people. They will always have an opinion about everything. Keep to the way you learned how to do things. Your education was an intense degree in home economics. People travel out of there way to amish and Mennonite country just to taste and buy the products that you make on your videos. So keep doing what your doing. I watch every video and I thank God that you share your knowledge with us. God bless you😊

When the poop hits the fan, YOU are the one people will come to for advice and "education". There are MANY high school graduates that can't spell, form a cohesive sentence or do basic math. They can't take care of themselves, much less their offspring. I thank God for people like you and your wealth of information.

I am 76 years old and never heard of debubbleing or measuring head space either. You keep on being you. You are one of the hardest working women I have ever seen and that is intimidating to some people. I love your teaching, you go girl.

I must say, to be so "uneducated, " you sure have more grace, patience, and wisdom than a lot of "educated" teachers and professors I've met. So, don't you dare grow weary in your doing well. Ruthann I was appalled when you said someone commented you were un educated. You are such an amazing lady, mom and wife. You learned the right way and learned things working side by side with your grandma and mom. I’m 71 years old and I have learned so much from you in just a short while. The way you explain techniques is so good and easy to understand. You are so gracious to let us in on your tips and recipes. Those that are giving negative comments would absolutely have a stroke knowing how my parents and grandparents preserved foods. They were poor and had no modern refrigerator or freezer. Meat was boiled in large chunks then submerged into buckets of melted hog lard. When meat was needed, it was removed from the lard then cooked thereby rendering the lard. Or it was prserved by smoking.
You're smart to not trust the government, the government are afraid of citizens whom know how to provide for themselves.
Please keep making videos. You have a treasure trove of wisdom to share and i for one appreciate you.😊

There's a difference between education and wisdom. I'll take wisdom every time. I know a lot of educated people who are ignorant. Thank you so much for sharing what you know. It's invaluable to someone like me new to canning. I certainly consider the FDA guidelines, but I also use common sense. And as you said, everybody has to use do what they're most comfortable with. You are an excellent teacher. Keep teaching us!

Mrs. Zimmerman, I'm a 69 y/o guy that can remember my mom canning only small amounts when I was young back in the late 50's and early 60's. She preserved jam and or jelly only and she always sealed the jars by pouring melted paraffin wax on top of the food, usually a layer no more than a half an inch thick. She died in the early 60's so that is the extant of her canning. But I figured if my mom could do then so can I. I grow tomatoes and water bath the sauce, I pressure can chicken, ground beef, pork roast, meatloaf, potatoes, green beans, legume beans, cherry preserves with fruit from my own trees. Your knowledge is spot on and 100% correct, you are as educated as any one that I know. Please don't sell yourself short, you are a very accomplished woman.

Wow! My Dad had an eighth grade education and was awarded when he redesigned the guns for battle ships. Drove without a license until he moved to Florida as a 70 year old and had to test for it.
Skills of all kind are lacking in today's world and

My dad was an electrician for a college and was changing a lighting ballast in a classroom while a plumber was was fixing the plumbing under a sink where a teacher, with a PhD, had poured plaster of Paris, because "it was liquid when he poured it.". We all have our gifts and expertise, unfortunately, Common Sense isn't so common and apparently, it's not a flower that grows in everyone's garden. Some people are geniuses, but don't have the common sense God gave a doorknob. I think the people who leave negative comments about you must fall into that category because they don't stop to realize that the way you do things has worked for people for literally hundreds of years, even though it may go against books and rules that have only been around for 50-60 years. You keep doing your thing your way and teach everyone that is so desperate for the knowledge and wisdom that you have to give. You are a gift from God. Don't ever doubt that!

I love how you say you are "skilled". I have learned more from the 40 years of dairy farming and gardening than any book could teach me. People frowned at the idea of us raising our family on the farm using raw milk. We raised our own chickens and beef. My boys never had any allergies and I truly believe it's because of the home grown foods and not the processed food from the store.

I grew up canning the way you did. My mom and grandma fed our family with food canned from our garden. Food up to the neck of the jar. No water over the top of the jar. I knew about botulism but it was never a problem for us or anybody we knew. Im so glad i found you. Subscribing and following. I look forward to more. Yes to the gov't wanting us unhealthy and dependent. Edited to say: you do NOT sound uneducated. You communicate better than 80 percent of youtubers. I have three college degrees, and I admire what you are doing SO MUCH. Thank you for what you are teaching.

Ruthann, I am. Not Mennonite but my grandma who raised me, canned exactly the way you do. She was born in Aug 1900. There was only waterbath canning when she grew up. Even meat was canned for winter use. We never boiled the lids either and lids were always used more than once. During the depression years they only had rubber rings. Anything in boiling water will be sterilized after 10 minutes.
Don't listen to people that have never had to go without money and convenience. They will always be negative. You teach people how to survive outside the grocery store. That is important with the way the world is going. God bless you.

my mother was a Mennonite from Manitoba, very not good childhood, was working and taking care of the little ones by time she was 12, so grade 6 tops, she was the best business sense, and the best Mom ever and no one wold ever think her uneducated, and remember if they give you grief about the way you speak, speak low German and really confused them...lol keep up the good work.
