The pressure has nothing to do with sealing the jar. The reason you use pressure Vs water bath is all about the temperature. Pressure canning increases the temperature in the canner killing the bacteria in lower acidic foods.

Waterbath canning requires hot/hot cold/cold. Your demonstration does not cover this. Hopefully, no one gets hurt as a result .
