Saturated fat is one of the best things you can possibly consume. Aside from acetic acid, it’s the cleanest, most enriching form of fuel for mitochondria. In fact, stearic acid is shown, in vivo, to cause mitochondrial fusion.

The studies demonizing saturated fat are based on associative data, cherry picked data, corruption, and don’t account for confounding factors. When people drastically increase saturated fat intake while removing seed oils, processed sugar, and gluten/grains/wheat, they see improvements in all biomarkers. People who eat exclusively animal protein and saturated fat have CAC scores of 0, which shows zero risk of developing heart disease.

The healthiest, longest lived people in the world have elevated cholesterol. Blaming cholesterol for heart disease and plaque is like blaming fire fighters for house fires. Cholesterol is doing its job to shore up damage caused by seed oils, environmental pollutants, and sugar.
