Creamy Scallop Linguine
Serves 2
Ingredients
1 tbsp butter
250g scallops
125ml white wine or chicken stock
200ml cup cream
Juice and zest 1/2 lemon
1 garlic clove, minced
Handful chopped parsley
Salt and pepper to season

Method
1. Bring a pan of water to the boil and cook the linguine for a minute or two les then the recommended cooking time.
2. Then in a pan heat the butter until melted add the scallops and cook for a couple minutes on each side until golden then remove from the pan.
3. In the same pan add in cream, white wine or chicken stock, lemon juice and zest, garlic and mix this together
4. Let this gently simmer for around 5-8 minutes then add in the pasta and a handful of chopped parsley and cook for 2 more minutes
5. To serve top with more parsley and the cooked scallops
