Serverpod seems to be evolving to be a great backend for flutter, did you already look at that? Dart code on the backend and Postgres SQL DB.

I’m using Firebase to test ideas and implementing it very decoupled from the app so if it’s a success I can easily move away from it 😅

Just a feedback, the background music is very distracting (in my opinion, unnecessary)

Another option you could have looked into is AWS Amplify. It's a complete alternative to Firebase, has support for relational data, auth, push notifications, cloud functions and uses S3 for file storage.
