You can just let it rest inside the flour and turn a few times for about ~5 minutes for the same thing. Give a little pressure on top when you flip too, but not much.

The real trick is into flour/flour mixture, into a pretty liquid dredge, then immediately take it from dredge back to flour without straining. If you put pressure on the chicken when covering them in flour you get the craggy bits and dont have to do it 60 times.

Hey I work in a chicken restaurant our breading does not coming out flaky it’s evenly balanced I’ve done experiments and noticed self raising flour and baking powder can puff the crust, too many layers can result in a hard crust and can affecting cooking the chicken through that’s with wings but with tender and breast layers are possible.
