You state that in general that the range hood needs to extend over the range by 3" on each side, yet you do not show a single example where this is the case. I don't think in a residential setting I have seen a range hood extend beyond the width of the range. So I am planning to go with with a 30" hood for my 30" inch range. I think that would meet any code.

So, when you say 30" range should have a 36" hood...your video shows the size of the wood SURROUND, not the actual insert. Therefore, another example according to your video would be, a 36" range-top, would have a 40" vent insert, inserted into a 42" wood hood. Correct???

I have a 30 inch space between my cabinets over my stove. So that means I have to get a 24” insert so that I can have 3 inches on each side? That makes zero sense and I have never seen that before. Why can’t we get an insert to fit the space? Why do we need a 3” gap?

I do so wish we could get appliances in beautiful COLORS! But NO, the makers are color blind and know only black, white, and stainless steel. The few that do make color versions, like Zline, are notorious for their poor reliability and terrible customer service.
