Ingredients

Pumpkin Mixture
425 g Pumpkin puree
(1 unsweetened organic pumpkin can)
50 g Carrot juice
4 g Salt
50 g Dark brown sugar
10 g Vanilla
4 g Ground cinnamon
15 g Fresh ginger, grated
or 2g ground ginger

Pumpkin Batter
400 g Pumpkin mixture
200 g Eggs (4)
100 g Granulated sugar
50 g Dark brown sugar
225 g Neutral oil
(grapeseed / peanut / safflower)
250 g All-purpose flour, sifted
10 g Baking powder
5 g Baking soda

Spiced-Maple Syrup Punch
150 g Water
70 g Maple syrup*
50 g Dark brown sugar
5 g Vanilla
20 g Cinnamon sticks
or 5g ground cinnamon
10 g Star anise, crushed
20 g Orange zest (1)

Pumpkin Seeds Praliné
100 g Pumpkin seeds
(pumpkin kernels or pepitas)
50 g Whole hazelnuts or almonds
110 g Sugar
2 g Salt
5 g Vanilla
20 g Hazelnut oil or neutral oil

Pumpkin Chantilly
225 g Heavy cream, hot
5 g Vanilla
8 g Star anis, crushed
2 g Nutmeg, grated
1 g Orange extract (Optional)
2 g Gelatin
200 g Heavy cream, chilled
90 g White chocolate
150 g Carrot juice
(cooked and reduced to 25g)

This cake was the first thing that came to mind when preparing my dinner plan for New Year's Evening. Enjoyed every step in the process of creating it. And the result was amazing. My tip for pumpkin cakes is to replace most if not all the fat with yogourt. I like the chewier texture and it stays moist a long time.
