Phew... alright, i see nobody knows what's going on, so here we go:

In Blender's built in simulator MantaFlow, surface tension is a given, it's simply ON all the time even if you don't want it to be.
The Flip add-on has it as a separate option. Makes the simulation faster, but at the cost of droplets not gravitating towards each other. Basically in large scale it is a good idea to switch off to gain some performance, but turn on immediately if you may witness small amounts of splash up close because otherwise it is going to become evident that the droplets don't care about each other's presence.

Resolution is not the only parameter that needs to be optimized in such a project

For some reason it felt like, flip fluid works great on big scale fluid simulation, and manta flow works great on small scale fluid sumulation. I don't know. May be it's just my thought.

For my experience flip fluids is a lot better

To be honest mantaflow much more looks like "fluid". Maybe FF base settings wrong, but it looks like the water has "hyperfluid" ? )) and on 256 res on 1:44 FF looks like just tonns of particles, not like "fluid"

According to what I watched, basically one has more noise than the other, something you can change into the parameters anyway ?

Noticed that flip fluids Looks more bouncier than mentaflow... I mean.. If you have a lower spec pc.. You can go to mentaflow since Its great too for lower pc... Flip fluids Is not great for those since the simulation needs to have thousands of samples

And.. The flip fluids are like Have Much more pressure than the blender one... Blender looks more realistic though

Flip Fluids, no contest, Mantaflow is 8 years old, while Flip Fluids is actively developed and has a ton of presets!
