This looks great! I am going to make this, this weekend! I love fresh kimchi. He prepped the cabbage with salt, to extract the liquid, and I am sure he washed it well and dried it very well. Looks like 4 onions, 6 or 7 cloves of garlic, fish sauce, med. dark karo or other sugary substance of your choice, gochugaru, vietnamese red pepper powder, and maybe salt or sugar (Not sure about that one). The white paste is 1.5 cups of water with 2 Tbsp. glutinous rice flour, cooked at medium heat for 5 to 8 mins, stirring frequently. Let it cool before mixing it with the pepper onion concoction and then spread on the cabbage. Good luck everyone and please do wear gloves or you will regret it.
