Cacio e Pepe Risotto Stars
All I want to eat is a warming, comforting, cheesy bowl of love! I wanted pasta but I was craving to cook it as risotto. I thought I had orzo pasta in my pantry, but all I had for a small pasta, was a small bag of little stars!
Ingredients:
250 G star shaped pasta, or any small pasta you have.
5-6 cups vegetable broth, or vegetable bouillon, dissolved in hot water.
4 Tbs butter
Small piece of Parmesan cheese rind
1 cup freshly grated Parmesan cheese.
1 1/2 Tbs freshly ground black pepper
Salt to taste, extra black pepper to taste, chili pepper flakes to taste .
Directions:
Heat the vegetable broth in a pot, over medium high heat, add 2 Tbs butter with the pasta and toast, until the pasta is golden brown color, and some of it is dark brown, add the cheese rind and 1 cup of the vegetable broth and continue to cook over medium low heat until the broth is absorbed add more broth and continue to stir, add the freshly ground black pepper, and continue to stir, keep adding broth every time, the broth evaporates as you constantly stir, make sure that the pasta does not get over cooked, depending on your pasta type will be the cooking time. My pasta was done with in 12 minutes perfectly cooked al dente. Turn off the heat, then add more freshly ground black pepper, and the other 2 tablespoons of butter and continue to stir, add more vegetable broth if you need it so you have a Creamy consistency to the pasta. Garnish with more black pepper and grated cheese and enjoy..
