I have been either roasting or a brief saute before adding water for making the broth.

I use the costco roasted chicken carcasses bones and skin and any leftover meat and place 2- 3 of them in an instapot with a couple of tablespoons of A/C vinegar and fill with water and pressure cook 2 hours broth into quart jars and pressure can 30 minutes....you can add your spices etc later...I like to leave it plain for cold and flu season

I find that roasting the chicken and veggies in the oven first, helps with both the flavor and color. I also add in several cloves of garlic because I love the flavor.

I use my broth in place of water for all types of recipes like when making rice or noodles.

I think the recommended canning time is 25 minutes for quarts...

Quarts are 25 minutes in pressure canner according to the National Center for home preservation. Pints are 20 minutes. She is filling quarts. THIS NEEDS TO BE CORRECTED NOW!
