Carmelitas:
Ingredients:
- 3 cups of Lehi Mills Cinnamon Cookie Mix
- 3/4 cup of butter, melted
- 11 oz of caramel, cubed
- 1/2 cup of heavy cream
- 10 oz of chocolate chips
Directions:
1. Preheat the oven to 350F.
2. Combine the cookie mix & melted butter in a medium bowl. Stir until well combined.
3. Press 1/2 of cookie mix into bottom of a lined or greased 8x8 pan and bake for 10 minutes.
4. In a saucepan, melt caramel & cream on low heat until combined. Note: do not bring to a boil since that'll result in a different caramel consistency. Once melted, remove from heat.
5. Remove the cookie pan from the oven and add the chocolate chips to the top. Pour the liquid caramel mixture over the top of the chocolate chips.
6. Use the remaining cookie dough and press (or crumble) it into the caramel layer. Bake for an additional 15 minutes.
7. Once cooked, remove and let cool before consuming.
