Thank you for this informative video. When I first tried retsina, like many I didn't like the 'turpentiney' taste. But I found it went very well with feta cheese or kalamata olives, basically salty, the olives additionally having a bit of an 'iron' bite. For me it also goes well w/spankopita. Not sure if you'll ever be getting into sakes... But I have a related experience with those. Sake by itself to me is unremarkable but if you take a sip after a bite of sushi or sashimi w/wasabi.... voila! You can really taste the rice in the sake. Wine & food is a natural!

greeks had no hardwoods like oak. All they had was pine/cypress trees It flavoured the wine Now its added as a flavour.
