sold as a cheap greek white wine in Australia, I was told it was because they did not have Hardwoods(oak) for wine barrels, so used local softwoods, cypress and pine. THAT gave it, its unique flavour. I enjoy it!

We use Retsina in our marinade for Souvlaki along with garlic, EVOO, lemon, and oregano.

I used to be able to find retsina in Los Angeles, but for the last decade or so I can't find it anywhere. It's the only wine I crave. I've been drinking it since I was ten years old.

I was told a different story when I was younger. That during a war, the other side (I don't remember who). Put the sap in the wine of the Greeks to ruin it but it only improved it. They loved the flavor. And me too! Retsina is delicious!

the fact is that retsina was naturally produced by the barrells they were using and when started using clay they "had to add the resin in order to match the taste

Indeed, The greeks use to match it with Tkasiki sauce ( yougurth ), and with Mousaka . Here in Chile Retsina is hard to Find Therefore we match greek food with Ouzo, and the Yougurth sauce with a White wine a Gewurtraminer or Riesling ( not botrytis ), the noble rot one is for dessert We have both in Casablanca near Vina del Mar
