Why go to all the trouble, if you are just going to put your family at risk? With an astounding hooray, I'm in complete agreement with that. My grandma was a safe canner and she is who I learned from. She learned from her mother during The Depression. So even my great grandma did it right, for the times. Things have changed since then and I guarantee you, they both would be telling me to do it the way it is safe. Keep everyone safe.
