Ingredients Required:

Tomato Basil Soup - 2 Cups
Paneer/Farmers Cheese/ Cottage Cheese - 250 Grams
Onion- Diced half a cup
Butter - 2 Tbsp
Cumin Seeds - 1 tbsp
Ginger Garlic Paste - 1 tbsp
Turmeric powder - 1 teaspoon
Red Chili Powder (skip if you don't eat spicy)
Coriander Powder- 1 tbsp
Cilantro leaves, chopped- for garnish
Steps:
1. Dice Paneer into small cubes.
2.In a bowl, mix the paneer with turmeric, coriander powder, red chili powder,ginger garlix paste and set aside.
3.Set the instant pot to saute mode.Add butter and wait for it to heat up.
4.Add cumin seeds and once they splutter, add onions.Saute for 4/5 minutes.
5.Add paneer and saute for 4/5 minutes.Stir gently and occasionally.
6.Add two cups of tomato basil soup.Add half a cup of water if your soup is thick. Close the instant pot , set to 'pressure cook/manual' mode, and set the timer to 3 minutes and make sure whistle is in sealing mode.
7.Let the pressure release naturally and only open the lid after the safety valve goes down.
8.Set the IP to saute mode and simmer till gravy reaches desired consistency. Hit cancel and garnish with cilantro leaves.
Notes:
1.Serve hot over rice or naans/chapatis/rotis/tortillas.
2.Serves 2 adults.
