For everyone who actually doesn't know what this is for, it's for either really old bottles with a cork so bad it would all cumble trying to get it out, or expensive bottles so it can't be reused or refilled.

Port tongs were invented in the eighteenth century as a way to cleanly break the neck of old bottles whose corks might otherwise break, disintegrate or even get glued to the bottle neck due to port’s sugar content penetrating the cork.

I think if an old bottle of wine has been stored upward for a long period of time the cork dries out and when you pull the cork it could crumble. I could be wrong though.

The wines are decanted and left about 20 min before serving. If they are old from 40 min onwards. Decanting the wine serves precisely to collect any residue.
