Very nice. Personally, I prefer a softer crust; a short crust sprinkled with granola components and baked with the ring to ensure the shape maintains.

The nice thing about a simple recipe such as this is that it uses clean technique which you're welcome to simplify or extrapolate on. Lemon curd, ginger granita, white balsamic pickled lemon, chiffon cake, espresso in the granola, black pepper; theres a thousand ways to play.
