One of the best Dominican foods is Mangu -- a dish of mashed plantains that you usually eat for brunch. It is creamy, warm, and so damn comforting. I keep it simple here and serve it with a fried egg and pickled onions. This brunch is fully vegetarian but can be spruced up with frying cheese and Dominican salami.

This version of the dish is fully vegetarian and gluten free.

Ingredients:

Mangu:
3 Plantains - Green
Butter - 60 grams
Water
Salt

Pickled Onions:
3-4 red onions
Olive Oil
Vinegar - 5 tablespoons

Misc:
Egg

I'm from Canada & never heard of it until my sister told me about it & made it for me.
Its absolutely delicious & a very good alternative to potatoes which I seldom eat if at all unless its a sweet potato NOT a Yam.
I am about to make this for the first time & cant wait, its amazing.

The Green Plantain are roughage. It's what you put into it that adds flavour. Salt, pepper, all purpose seasoning, garlic granules, olive oil, sweet paprika, soy sauce. Then the pickled red onions. Tasty!

I am Jamaican and i have never boiled green plantain only fry. I plan to try this since i love plantain 😋.

Hi I cut ends off and a couple of slices through the platanosoak in in HOT tap water and peeling is super easy, just peel with your fingers. Easy Peary. Thank you for your recipes👍

As a Dominican women I’ll tell you now your WRONG that comes from our west AFRICAN ancestors we may have inherited our language from Spain and our traditions and way of life from our (Caribbean native indigenous) (“Indian”) side but we most certainly got a lot of our dishes if not most from AFRICA please fact check your stories before your speak about the lovely RD thanks xoxo.
