Easy Pancake Batter Donuts!!!

Donna uses traditional pancake batter to make these easy donuts!

INGREDIENTS
For the batter:
1 1/4 cups of all purpose flour
3 1/2 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
1 cup milk
3 tablespoons butter, melted and cooled
1 egg
Canola, avocado or neutral oil for frying
For the donuts:
pineapple rings (save pineapple juice)
apple, sliced into rings, core removed
½ cup flour for dusting rings
cinnamon sugar
1 cup powdered sugar
saved pineapple juice
Toasted coconut (optional)
DIRECTIONS:
In a large bowl, whisk together the flour, baking powder, sugar and salt. Add about half the milk along with the butter and egg. Stir to combine and add remaining milk to create a thick batter.
In a deep Dutch oven add enough oil to reach 2 inches and heat to 350 F.
Remove the pineapple rings from the can, saving the juice.
Blot the rings to remove excess moisture.
Dip each ring to coat in flour, then in the batter. Fry rings until golden on both sides. Approximately 8-10 minutes.
Remove to a wire rack to drain.
Repeat the procedure with the apple rings.
Dip the apple rings with cinnamon sugar.
Add enough pineapple juice to the powdered sugar to form a glaze. Drizzle over pineapple ring donuts and top with toasted coconut.
