Excellent chine bone removal from the side. New Zealander here. We stand facing the bandsaw teeth. I was 17 and shit scared using the cleaver and amazed how precise the old hands used them but I mastered the bandsaw somewhere along the way over 40yrs and still cutting Pak n Save Papakura south Auckland.
