Frito chili pie is a Texas favorite! Fritos corn chips covered with homemade Texas chili, fresh cheddar cheese and diced onions. Texas Frito chili pie is perfect for those cold nights.
Shopping List:
1 medium diced sweet onion with a good pinch of salt
1 jalapeno pepper, finely chopped
1 tbsp. minced garlic
1 lb. ground chuck beef 80/20
1/8 cup Fiesta Brand Fancy Light Chili Powder
1 tbsp. ground cumin
1/2 tbsp. paprika
1/2 tbsp. brown sugar
14 ounces diced tomatoes
6 ounce can tomato paste
1/2 tsp. unsweetened cocoa
Small pinch cinnamon
10.5 ounce can beef broth
Frito Corn Chips
Block cheddar cheese, shred
Directions:
In a large cold pot or Dutch oven over medium heat, add oil and diced onion with a pinch of salt and cook until soft and translucent, about 5-7 minutes.
Add the diced jalapeno and minced garlic to the onions and stir about 45-1 minute seconds until fragrant.
Add the ground beef to the onions and garlic, break up and brown, about 7-8 minutes, allowing it to sear well and leave it kind of chunky.
Add the diced tomatoes and tomato paste. Stir until well blended in.
Add all of the spices and cover with the beef broth. Bring to a simmer, reduce the heat to medium low and simmer for 1 hour, stirring every 15 minutes or so. Cook until you reach the consistency you like.
Preheat oven to 350F.
Line a baking sheet or foil pan with Fritos Corn Chips.
Cover the chips with the chili, adding more chips on top, and cover with the cheese.
Bake in over 20-25 minutes or until the cheese is thoroughly melted and the pie is heated through.
Serve immediately and enjoy.
