Bro, this just brings back that nostalgia. Nothing is better than Lamb Head so tender that the bones fall apart, along with the hooves for snacks before everyone comes together to eat the head. Ahhh, now thats nostalgia.

lamb(or cow sometimes) head is very popular meal countries like Turkey, Iran, Azerbaijan. in Azerbaijan and Turkey people cook head and feet at the same time (i don't know Iran) and make it as a soup, personally i didn't taste it but people say it's very good, in Azerbaijan it's called "Xaş"(Khash) and in Turkey/Iran "Kelle Paça/Cale Pacha" means "head and feet"

I'm from the Four Corners, in NM. My family and I (who are part of the Navajo Nation) would butcher sheep often because we had a big herd.
My grandpa or uncle would put the head (with wool) on the fire pit to burn off the wool. Then scrap off the black bits and wrap up the entire head inside foil and smoke it for a few hours.
As a kid I was always hesitant but when I first tried it it was amazing!

My Persian dad would make this in a very similar way, but he would also throw extra tongues into the pot as well because they were our favourite part. It was always absolutely delicious!
