Goat leg paya is very very famous in south India. I remember how my grandma used to make it for us whenever we visit her. She cooks the legs for a whole night to get rid of impurities. And then add spices the next day morning and eat it with idli or idiyappam, it was just heavenly.

we also eat them in Egypt! we usually braise them as well, and its called Kaware'. the broth is the best part because it becomes really smooth due to the gelatin, and we usually eat it with rice.

In Bangladesh we eat this paya with paratha. Specially we eat this after two or three days of Eid Ul Adha. One of my favorite dishes 😋

Also, You can actually do a lil' bit more (break the big bone and cut the non-boney pieces), so that you get small & more pieces to eat, which is a bit easier for most people and also can eat the delecious Bone Marrow!
