Bacon and Cream of Chickpea Soup

PREPARATION TIME: 10 minutes
COOKING TIME: 30 minutes
SERVINGS: 3-4 servings
INGREDIENTS:
425g/15oz canned chickpeas, rinsed and drained
50g/1.75oz lean bacon, chopped
150g/5.25oz white onions, diced
50g/1.75oz carrots, diced
25g/1oz celery stalks, diced
15ml/0.5fl oz olive oil
1L/1 quart vegetable or chicken stock
salt and pepper, to taste
paprika for serving
METHOD:
1. Heat olive oil in a pot.
2. Add bacon and stir until slightly brown.
3. Add carrots, celery, and onions. Sweat until onions are translucent.
4. Add chickpeas and stock. Simmer for 20-25 minutes.
5. Transfer approximately half on the pot’s contents to a blender. Process until smooth.
6. Stir puree back into the pot and bring back to a simmer.
7. Ladle into individual bowls and top with a light dusting of paprika.
