One thing you forgot to mention is the pairs in twisted pair cables have different twist rates, to reduce cross talk within the cable. Also, the first use of CAT3 cable in a LAN was for StarLAN, which evolved into 10baseT.
Incidentally, the first LAN I worked on, in early 1978, used triaxial cable, that is a centre conductor and 2 shields. This was in a proprietary LAN from Rockwell Collins and carried data at 8 Mb. I worked on that LAN in the Air Canada reservation system, in Toronto. It operated in a ring, similar to token ring, but instead of frames, it used time division multiplexing (TDM) where each device was assigned a time slot in which to transmit. It was used to connect tape and disk drives, along with some other equipment, to the CPU and there could be multiple CPUs on the ring.

Fun fact about UTP... the twists in each of the four pairs are different TPI which also helps cancel its own radiative component.

Back in the day CAT-7 was the draft version or the newest upcoming version. I did not know we have (or having Cat-8). Man, time flies!

Before you know it, we may have Cat-9 through 15 or maybe even a different new nomenclature.
