The only problem I have is how tf did Obi grow his beard and hair back so quickly in the next episodes? Would’ve been cool to see him growing it back slowly over the course of the season.

Here's the thing, if the Jedi Council wanted a genuine reaction from Anakin over Obi-Wan's death then fine don't tell him beforehand. But if they did not want encounter the issues they had afterwards they all (including Obi-Wan) should have clued Anakin in after the fake out death. There no reason why they shouldn't since the criminal underworld bought their setup, and bringing Anakin in the plan after that would not have jeopardized the operation.
