Ingredients
1-1/2 cups cottage cheese (Daisy brand is my fave) (more fat content the better)
1/3 cup maple syrup (look for a sugar free one)
1/4 cup cocoa powder
1/4 cup natural unsweetened creamy peanut butter (stir up the jar because of the oils) or peanut butter extract just use a tsp or so
1 teaspoon vanilla extract
1/2 teaspoon salt
2 tablespoons chopped peanuts
2 tablespoons Enjoy Life Semi-Sweet Mini Chocolate Chips (or any sugar free ones like choczero)

Organic Agave nectar would make a great sweetener, and it has a much lower glycemic index than maple syrup. Can’t wait to try this - you had me at chocolate and peanut butter.

I wonder what it would be like to blend in dehydrated powdered fruit. I have a friend who dehydrates strawberries and other berries and then pulverizes them into powders. Or even some homemade preserves swirled through.

This is amazing and so easy to do! I had been wondering if cottage cheese could be used to make a frozen dessert because it is a creamy consistency and has a light flavor like heavy cream. I will definitely try this. I was making ice cream with bananas and avocados, but I live far from the supermarket and can't always get the produce. But this idea I like even more. I will try it with just the cocoa as well and also make a vanilla version and other flavors as well like coffee, coconut and almond. I'm very excited about this! I consider this a meal.
