I tried this!! It's quite strong and garlicy. I had parsley instead of cilantro, and no lime zest. It was delicious! It really does go well with garlic bread, too. Seriously elevated my salad.

Blend:
- 2 tbsp greek yogurt
- Zest of a lime
- Juice of a lime
- 1-2 tbsp tahini
- 3-4 cloves garlic
- Cilantro
- Salt and pepper
- 2 tbsp olive oil
- Splash of water

I've seen you use ingredients recently that are very popular in the middle east. Try to make fattet hummus (also known to Syrians as Tisiyeh). I think you'll like it a lot as it's super simple, cheap, and fits your taste in salad dressing!

I did something similar last weekend but without cilantro. Instead I used dried herbs. Also I didn’t even used a food processor and it worked fine. So good!!

How long does this last though? Is this for like a one-time use or could you preserve this in the fridge and use it for another day?

Nice sauce, is kind of modified tsatsiki…. I can suggest 2 different sauce that you can use in many ways:
1)salsa verde: is very classic Italian sauce, is commonly used with boiled meat and you need: a lot of parsley, a lot of good olive oil, some cappers in vinegar, some anchovies in oil just a little bit (doesn’t have to taste like fish), some boiled egg white for thickness. Bland everything with some ice to have a nice green color, than adjust with salt and vinegar.
The second sauce is my recipe, and it goes along with many foods, and you need:
A lot of roasted pine nuts, olive oil, parsley, lemon peel and juice (it has to be pretty sower) and salt. Blend everything and is done…… I love it!
The important thing about this sauces is that you should eat cold, if you eat with hot food, but not mix with it, but add spoon by spoon to your hot food

Substitute Cilantro with parsley and/or chives and it's my go to dressing... To many guests and customers don't like cilantro
