Dressing:

1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried mint
1 garlic clove minced
½ teaspoon salt
1/4 teaspoon pepper

Whisk everything together until emulsified.

To keep the salad dressing mixed well, and not separate, you just have to pre-mix it or whisk it well (or shake thoroughly in a closed jar) until the oil aerates into the rest of the ingredients. It doesn't have to have mustard if you don't like it (I don't lol)

the best restaurant tip is to add SWEETENER!! i never got why my dressings didn’t taste as good and literally just adding a small squirt of honey elevated it like like NEVER before. that’s what i thought you were gonna say.. i’ve been adding mustard, EVOO and vinegar forever 😂

You might want to explain that the mucilage in the mustard is what emulsifies the dressing, and that more mucilage is in whole grain mustard.

I love adding oil and spices to hot pasta. I was slightly scared of the large cut on the red onion but it worked out beautifully. Hope you and your family are well.

Also the ratio of oil to acid is usually 2:1, and seasoning your salad is a must. Salt the veggies and it brings out the flavor

My salad dressing never separates, and I don't add mustard. Just some vinegar, olive oil, and honey. All time best. I mix it well, which is probably why.
