I have always wanted to write you a thank you note, but your site never had a way to contact you! Good thing because you would be flooded with emails of loving compliments! You are the BEST! I get so many compliments from desserts that I make from your site. My best friend’s dad is turning 85 next week... he’s getting his favorite, Rocky Road!

Hi Stephanie! I just started watching your videos and I enjoy them so much, I subscribed to your site!!! I have a few helpful tips I would like to share with you when making homemade marshmallows. Hope you find them useful!!

First, when I am ready to pour the marshmallow into my pan, I lightly spray my silicone spatula and recessed spatula with non-stick spray. This will help release the marshmallow from the bowl and the spatula.

Second, when I want to make colored and flavored marshmallows for an occasion like Valentine's Day, I use red food coloring and strawberry extract. Instead of using powdered sugar, I use the same food coloring and mix it with granulated sugar. Spray the inside of your pan with non-stick spray, and then dust with the colored sugar. Sprinkle colored sugar on top. Roll cut marshmallow squares in the same sugar after cutting them, or use cookie cutters to make shapes. It's like having homemade "Peeps". Delicious!!! Hope you get to try them.

Thank you for the clean up suggestions & for the conversions as I live in Canada and we use metric. My Grandma used a small amount of oil (unflavoured) to brush the knife with to cut. That helped with slicing and I didn't notice any added flavour. Thanks again!

You could try using golden syrup for the corn syrup.

My mother made these when I was a child. I have a very poor instructions for this recipe, so grateful I found your recipe. Turned out beautifully. As a girl my mother rolled the marshmellows in very finely chopped nuts and they were excellent this way. Also, I put a little bit of peppermint flavoring and red food coloring.

At the end I would pour a cup or two of Rice Krispies in the bowl to clean it!  Hot water in a bowl or even boiling would be good to set the bowl in to keep the mixture workable until you are finished.  I think a cup of boiling water to dip the knife in often would keep it workable also.

Hello Steph! I had to write you! I've been "shopping" around for the perfect marshmallow recipe and after a few tries and errors I came back to your channel… You NEVER let me down! My marshmallows are "drying"  as I'm typing! They were so easy to make! On my cookie tin I have some home made graham crackers so tomorrow at this time I hope I will have some delicious home made s'mores! :)) Thx again for sharing all your experience and your wonderful recipes! It is a Casa induction burner. I bought it at Williams Sonoma when they had a sale a few years ago. I don't think they carry the same one anymore.
