Great name for a chef, Joel! I have some mackerel in the freezer and rely on two particular recipes that I do with it. Both very tasty and nutritious recipes, but it would be great to have more ideas, so I shall try this one. Thank you for the inspiration.

I forgot the exact dish reference, the chef i worked for in dallas use to have sunchoke chips and something like sunchoke puree with scallops and black garlic sauce.
