Olive Tapenade

Ingredients

- 160g (5½ oz) olives
- 1 tsp capers
- 1 small sprig of rosemary, picked and roughly chopped
- juice of 1 lemon
- 3 tbsp olive oil

Method

1. Add all the ingredients to a food processor and blend until you reach your desired consistency. For a balance of smoothness with some texture, blend until reasonably smooth but slightly chunky.

Usually we make it with garlic, anchovy, caper, olive oil (Caper is called tapena in provençal so without it this olive spread can’t be called tapenade). Love your videos, keep the good work!

I've only ever had it made with black olives, but it's a top tier condiment for cold cut sandwiches!

One of my favorite condiments! I like it just a smidge chunkier, making it versatile enough to be used for a Muffuletta, my favorite cold sandwich.

I never knew it’s so easy to make. I thought chopping was the only way to make tapenade with many different ingredients to it. It was intimidating and overwhelming

I love the versatility in this mans skillset. Worldwide cuisine with twists and turns that end up interesting and new - at least to me. Great stuff. Would love to see more experimentation here, really making it up as you go along stuff. See what happens!
