Sourdough Cinnamon Breakfast Bread

150 g sourdough starter
325 g water
20 g avocado oil
20 g honey
500 g flour
10 g salt

Butter room temperature
Brown sugar
Cinnamon

I started at 9 am.
You can add 1-2 tbsp of flour to the dough if it feels sticky.
Mix all ingredients covered and let it rest for 1 hour. Fold and stretch 3-4 times 30 minutes apart. Here is the key: I did it with active starter and discard, and both times worked great.
After mixing my dough, I put it in a warm place (like a warm dishwasher after I do my dishes).
When I see that gluten is developing well after 2 stretches and folds, I leave it out.

After 3 stretches, I leave it on the countertop for 3-4 hours.
Stretch the dough and add butter,sugar and cinnamon. Shape it and put it in a baking dish, covering it with a towel and letting it rest for an hour. I was ready to bake 4-5 pm.

Preheat the oven to 400°F.
I put water in to create some steam.
You can cover with aluminum foil right away or let it bake for 10 minutes and then cover it.
Bake for 30 minutes.
Reduce the temperature to 375°F, remove the foil, and bake for 15 more minutes.
If you can’t take out your baking dish right away, just let it cool for 20-30 minutes and it will come out easily.
