I don't see the potato method as seasoning so much as pulling toxic coatings off the pan initially. Mafter still recommends the potato method, but I don't know anyone who uses this method to regularly re-season any pan. Most French chefs I knew used just oil and salt on new pans, then just oil to re-season.

potato would add carbohydrates to the oil coating, which would just burn and cause food sticking. the salt might make sense tho

The potato method is what matfer recommends, you cooked the sticky egg with no oil! The non stick egg had a lot of oil in the pan. Pretty shady

Salt first to remove anything stuck to the pan. Remove everything.
Then season with oil.
Idk what the potato is for but you don't need it.

All steel pans are carbon steel alloy... steel IS iron and small quantities of carbon in the alloy which might also have other metals but essentially a steel pan needs very high starting temp to prevent sticking an egg. The sizzle test with a drop of water dancing on the hot pan is a good suggestion. The only reason to use a steel pan really is to get the mallard reaction which cannot happen with Teflon garbage. I use now a granitestone pan and an eggs with oil/butter is perfection itself.. no seasoning..just making perfect eggs.

The potatos and salt is for taking the protive wax and coatings off when you freshly purchase the pan. Your pan was already seasoned 😂

Your can frozen fries/chips, and pan fry them with corn oil/salt. Then you have a treat after seasoning

Ill stick to baking my steel and iron, do them all in a big batch. You should try the potato method again but soak the potatoes to pull some starch, would be interesting to see if it changes the result.

Maybe they did it with a “gas burner medium high” which is way hotter than an electric medium high.

Test the sticky egg test with butter AND you dont need to season Any carbón Steel pan

Carbon steel pans are not stainless steel pans. Lower temps work with carbon steel. That egg is being cooked way too high of a temp. A lower temp is ideal, unless you are trying for a fried egg, ie the only way you can really cook an egg without sticking on stainless.

no oil in the pan to cook that first egg. last egg has enough oil in it to bake brownies…

Thin layer of Sunflower oil. Wiped dry and throw in the oven for 1 hour at 500f. Repeat two or three times.

I don't understand people that come up with alternative methods when they're OBVIOUSLY not as straight forward, even if the result was the same.
